Garbo’s Seafood opens in Dripping Springs, offering a taste of New England

Dripping Springs locals now have a new dining option with the opening of Garbo’s Seafood, adding fresh seafood to an area known for its barbecue and Tex-Mex offerings.

For transplants from New England, the food will be familiar. For Texans who have never visited Maine or Connecticut, Garbo’s offers a chance to try something new.

On Friday, Sept. 20, ambassadors and friends joined the Garbo family for a ribboncutting ceremony to officially welcome the restaurant to the Dripping Springs community. The restaurant is best known for its lobster rolls, oysters, and caviar. The atmosphere is casual and buzzing with conversation as patrons enjoy fresh seafood sourced from New England.

Founded in 2013 by sisters Heidi, Hannah, and Samantha Garbo, Garbo’s began as a food truck in Austin and has grown into a beloved brand. It is known for its authentic New England cuisine with an Austin twist. Over the past decade, Garbo’s has earned a reputation for its classic Maine and Connecticut lobster rolls, small plates, soups, salads, and a variety of desserts.

The sisters’ latest venture opened in Dripping Springs earlier this summer. The 150-seat restaurant serves both classic dishes and a few exclusives to the location. Guests can enjoy a raw bar with New England oysters, beer-battered fish and chips, whole live Maine lobster, and more.

Beverage director Josh Loving has curated a menu of craft cocktails, wines, beers, and non-alcoholic options to complement the fresh seafood.

“This really epitomizes exactly why we moved here to Dripping Springs from Austin. It's the sense of community, and that's what we're all about. We're really hoping to be a part of yours out here,” Heidi Garbo said.

The restaurant also features an upstairs loft and will host events and private parties.

'I'm so excited to talk to everybody about the different collaborations we have going on upstairs and in our private dining room,' Heidi Garbo said. 'We’re going to have wine collaborations, a paper-mâché mask-making class, and an oyster-shucking and caviar class.”

Garbo’s is located at 136 Drifting Wind Run, Dripping Springs, TX 78620. It is open Tuesday through Thursday from 11 a.m. to 9 p.m., Friday and Saturday from 11 a.m. to 10 p.m., and Sunday from 11 a.m. to 9 p.m.
